Slow Cooker Pot Roast

Slow Cooker Pot Roast
Old-fashioned comfort in every bite 🥘✨ Slow-cooked to perfection with tender meat, rich gravy, and hearty veggies—just like Grandma used to make ❤️🍽️

Ingredients:

  • 2–3 lb (900g–1.3kg) beef chuck roast
  • 2 cups baby potatoes
  • 2 carrots, peeled and chopped
  • 1 cup pearl onions or 1 large onion, chopped
  • 2 cups beef broth
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste (optional)
  • 1 teaspoon dried thyme or mixed herbs
  • 1–2 tablespoons olive oil
  • Salt and black pepper (to taste)

Instructions:

Start by preparing your beef. Pat the chuck roast dry with paper towels, then season generously with salt and black pepper on all sides. This step helps build flavor right from the beginning. For the best results, heat olive oil in a large skillet over medium-high heat and sear the roast for about 2–3 minutes on each side until a deep brown crust forms. While this step is optional, it adds a rich, savory depth to the final dish.

Next, prepare your slow cooker. Add the baby potatoes, chopped carrots, and onions to the bottom. These vegetables act as a natural rack for the meat and absorb all the delicious juices as it cooks. Place the seared (or raw) roast on top of the vegetables.

In a small bowl, mix together the beef broth, minced garlic, tomato paste, and dried herbs. Pour this mixture evenly over the roast and vegetables. The liquid will create a flavorful base that slowly turns into a rich gravy as the dish cooks.

Cover the slow cooker with a lid and cook on low for 7–8 hours, or on high for 4–5 hours. Slow cooking allows the tough cut of beef to become incredibly tender and juicy. You’ll know it’s ready when the meat easily pulls apart with a fork.

Once cooked, carefully remove the roast and let it rest for about 5–10 minutes before slicing or shredding. This helps retain its juices. If you prefer a thicker gravy, you can transfer the cooking liquid to a saucepan and simmer it until slightly reduced, or add a cornstarch slurry.

Serve the pot roast warm, surrounded by the soft vegetables and drizzled with the rich gravy. This dish pairs beautifully with crusty bread or a simple side salad.
