No-Bake No-Sugar Blueberry Cream Cheese Dessert

🧾 Ingredients
🧈 Crust:
- 1 ½ cups almond flour (or sugar-free crushed biscuits)
- ⅓ cup melted butter or coconut oil
- 2 tbsp honey/maple syrup (optional or sugar-free syrup)
🫐 Blueberry Layer:
- 2 cups blueberries (fresh or frozen)
- 1–2 tbsp honey or sugar-free sweetener
- 1 tbsp lemon juice
- 1 tbsp chia seeds
🧀 Cream Layer:
- 2 cups cream cheese (softened)
- ½ cup Greek yogurt
- 2–3 tbsp honey or sugar-free sweetener
- 1 tsp vanilla extract
🍓 Topping:
- Fresh blueberries
- Crushed nuts or almond crumbs
👩🍳 Instructions
1. Prepare the crust
In a bowl, mix almond flour, melted butter, and sweetener.
Press the mixture firmly into a lined dish.
Place in the fridge for 20–30 minutes to set.
2. Make the blueberry layer
Add blueberries and lemon juice to a pan.
Cook on medium heat, mashing slightly.
Stir in chia seeds and sweetener.
Cook for 3–5 minutes until thick.
Remove from heat and let it cool completely.
3. Make the cream layer
In a bowl, beat cream cheese, Greek yogurt, vanilla, and sweetener until smooth and creamy.
4. Assemble the dessert
Spread the cooled blueberry layer over the chilled crust.
Add the cream layer on top and smooth evenly.
5. Chill
Refrigerate for at least 3–4 hours (or overnight) until firm.
6. Garnish & serve
Top with fresh blueberries and crushed nuts.
Slice into squares and enjoy!
