 Ingredients:
 For the Rolls:
- 200g halloumi cheese (cut into sticks or cubes)
- 2 medium zucchinis (thinly sliced lengthwise)
- 1 tbsp olive oil
- Black pepper (to taste)
 For the Honey Mustard Glaze:
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tsp whole grain mustard (optional)
- 1 tsp lemon juice
- Pinch of salt
 Instructions
1. Prepare Zucchini
Slice zucchini into thin strips using a knife or peeler. Pat dry to remove excess moisture.
2. Cook Halloumi
Heat a pan over medium heat with a little olive oil. Cook halloumi pieces for 2–3 minutes per side until golden and crispy.
3. Wrap the Rolls
Take a zucchini strip and wrap it around each piece of halloumi. Secure with a toothpick if needed.
4. Lightly Cook Rolls
Place wrapped rolls back in the pan and cook briefly for 1–2 minutes, just until zucchini softens slightly.
5. Make the Glaze
In a small bowl, mix honey, mustard, lemon juice, and a pinch of salt until smooth.
6. Glaze & Serve
Drizzle the honey mustard glaze over the rolls and sprinkle black pepper. Serve warm.
