🧾 Ingredients

  • 1 mug strong brewed tea (cooled, no milk)
  • 1 mug self-raising flour
  • 1 mug raisins (or mixed dried fruit if you prefer)
  • 1 egg

👩‍🍳 Method

  1. Soak the fruit (important!)
    • Pour the tea over the raisins in a bowl.
    • Leave to soak for at least 1–2 hours (or overnight for best flavor and softness).
  2. Preheat oven
    • Set oven to 180°C (160°C fan) / 350°F.
    • Line or lightly grease a small loaf tin.
  3. Mix the batter
    • Add the egg to the soaked fruit and tea mixture.
    • Stir well.
    • Add the self-raising flour and mix until fully combined.
    • The batter will be quite thick and sticky.
  4. Bake
    • Pour into the loaf tin.
    • Bake for 40–50 minutes, or until a skewer inserted comes out clean.
  5. Cool
    • Let it cool in the tin for 10 minutes, then transfer to a rack.

  • Swap raisins for sultanas, currants, or chopped dates.
  • If you want slightly sweeter (still low sugar), add 1–2 tbsp honey or sweetener.
