🍞 Easy Fat-Free, Low-Sugar Tea Loaf
🧾 Ingredients
- 1 mug strong brewed tea (cooled, no milk)
- 1 mug self-raising flour
- 1 mug raisins (or mixed dried fruit if you prefer)
- 1 egg
👩🍳 Method
- Soak the fruit (important!)
- Pour the tea over the raisins in a bowl.
- Leave to soak for at least 1–2 hours (or overnight for best flavor and softness).
- Preheat oven
- Set oven to 180°C (160°C fan) / 350°F.
- Line or lightly grease a small loaf tin.
- Mix the batter
- Add the egg to the soaked fruit and tea mixture.
- Stir well.
- Add the self-raising flour and mix until fully combined.
- The batter will be quite thick and sticky.
- Bake
- Pour into the loaf tin.
- Bake for 40–50 minutes, or until a skewer inserted comes out clean.
- Cool
- Let it cool in the tin for 10 minutes, then transfer to a rack.
☕ Tips & Variations
- Add mixed spice or cinnamon for extra flavor.
- Swap raisins for sultanas, currants, or chopped dates.
- If you want slightly sweeter (still low sugar), add 1–2 tbsp honey or sweetener.
- Tastes even better the next day 👍
