  • 4–5 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Instructions:
Start by preheating your oven to 200°C (400°F). Prepare a large baking tray by lining it with parchment paper or lightly greasing it with oil. Wash and chop all the vegetables into roughly equal-sized pieces to ensure even cooking.

In a large mixing bowl, add all the vegetables. Drizzle olive oil over them, then add minced garlic, oregano, thyme, paprika (if using), salt, and black pepper. Toss everything thoroughly so each piece is evenly coated with the seasoning mixture.

Spread the vegetables in a single layer on the prepared baking tray. Make sure not to overcrowd the tray, as this will cause the vegetables to steam instead of roast. If needed, use two trays.
