  • 1 tablespoon apple cider vinegar

Instructions

1. Season the Beef

Pat the roast completely dry with paper towels. This is important because a dry surface develops a much better crust.

Combine the salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub the seasoning generously over every side of the beef.

2. Sear the Roast

Heat the oil in a large Dutch oven over medium-high heat.
