Ingredients
2 cups rolled oats
1 scoop vanilla protein powder
1 tsp baking powder
1 tsp cinnamon
Pinch of salt
2 eggs
1 1/2 cups milk (dairy or almond milk)
1/2 cup Greek yogurt
2 tbsp honey or maple syrup
1 tsp vanilla extract
1 1/2 cups mixed berries (fresh or frozen)

Chia seeds
Dark chocolate chips
Sliced almonds
Peanut butter drizzle
Instructions
1. Preheat Oven
Preheat oven to 180°C (350°F).
Grease an 8×8-inch baking dish.
2. Mix Dry Ingredients
In a large bowl combine:
oats
protein powder
baking powder
cinnamon
salt
3. Mix Wet Ingredients
In another bowl whisk:
eggs
milk
Greek yogurt
honey
vanilla
4. Combine
Pour wet ingredients into dry ingredients and stir until combined.
Fold in most of the berries, saving a few for topping.
5. Bake
Pour mixture into baking dish.
Top with remaining berries.
Bake for 30–35 minutes until golden and set in the middle.
6. Cool & Serve
Let cool for 5–10 minutes before slicing.
