Cook Time: 15–20 minutes
Total Time: 30–35 minutes
Ingredients
- 2 cups cooked shredded chicken
- 1 cup shredded cheddar cheese
- ½ cup mozzarella cheese
- ½ cup cream cheese, softened
- 2 tablespoons ranch seasoning
- 2 tablespoons chopped green onions
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 8–10 small flour tortillas
- 1 tablespoon melted butter or oil
- Fresh parsley or green onions for garnish
For Serving
- Ranch dip
- Salsa
- Sour cream
- Hot sauce, optional
Method
In a large mixing bowl, add shredded chicken, cheddar cheese, mozzarella cheese, cream cheese, ranch seasoning, green onions, garlic powder, and black pepper. Mix everything well until the filling becomes creamy and combined.
Warm the tortillas slightly so they become soft and easy to roll. Place a small amount of chicken filling on each tortilla and roll it tightly. Cut each roll into bite-sized pieces if you want mini taquito bites, or keep them as small rolls.
Place the taquitos on a baking tray lined with parchment paper. Brush them lightly with melted butter or oil. Bake at 200°C / 400°F for 15–20 minutes, or until golden and crispy. You can also cook them in an air fryer at 190°C / 375°F for 8–10 minutes. Serve hot with ranch dip, salsa, or sour cream.
Notes
You can use leftover chicken, rotisserie chicken, or boiled chicken for this recipe. Flour tortillas give a soft and crispy texture, but corn tortillas can also be used. Make sure not to overfill the tortillas, otherwise they may open while cooking.
Tips
Warm the tortillas before rolling to prevent cracking. Place the rolled side down on the baking tray so the taquitos stay closed. For extra crispiness, spray or brush a little oil on top before baking. Add jalapeños or chili flakes if you like spicy flavor.
