Instructions

Prepare the Foil: Tear off 7 large squares of heavy-duty aluminum foil.

Mix the Meat: In a large bowl, combine the beef, breadcrumbs, eggs, milk, onion, Worcestershire, salt, and pepper. Mix until just combined (don’t overwork it, or it gets tough!).

Form the Boats: Divide the meat into 7 equal portions. Shape into thick patties and place one in the center of each foil sheet. Fold the sides of the foil up to create a “nest” or boat, leaving the top open.

Add Potatoes: Toss the diced potatoes with oil, salt, pepper, and garlic powder. Spoon the potatoes directly on top of the meatloaf patties.

Slow Cook: Place the foil boats inside the slow cooker. It’s okay if they are snug or slightly layered.

Cook: Cover and cook on Low for 7–8 hours or High for 4 hours until the meat is cooked through and potatoes are tender.

Garnish: Sprinkle with fresh parsley before serving.

Potato Size: Cut your potatoes into small 1/2-inch cubes. If they are too large, they won’t soften by the time the meat is done.
