Carnivore Stuffed Meat Roll (Beef & Cheese Log)
Description:
A crispy, golden outer layer wrapped around juicy ground beef and melted cheese — this carnivore version skips the greens and keeps it rich, meaty, and satisfying.
Ingredients:
For the crust (carnivore dough):
- 1 ½ cups shredded mozzarella
- 2 oz cream cheese
- 1 egg
For the filling:
- 1 lb ground beef (80/20)
- Salt (to taste)
- ½ tsp black pepper (optional)
- 1 cup shredded cheddar or mozzarella
- Optional: cooked bacon bits 🥓
Instructions:
- Make the carnivore crust:
Melt mozzarella + cream cheese together (microwave or pan). Stir until smooth, then mix in the egg to form a dough. - Roll it out:
Place dough between parchment paper and roll into a rectangle. - Cook the filling:
In a pan, cook ground beef with salt (and pepper if using) until browned. Drain excess fat. - Assemble:
Spread cooked beef over the dough, sprinkle cheese (and bacon if using). - Roll it up:
Carefully roll into a log (like a meat pastry). - Bake:
Place on a tray, brush with egg wash (optional for shine).
Bake at 190°C (375°F) for 20–25 minutes until golden brown. - Rest & slice:
Let it cool slightly, then slice into thick pieces.
