🥗 Beetroot, Avocado & Orange Salad
🌿 Ingredients
For the salad:
- 2 medium beetroots (roasted or boiled), peeled & sliced
- 1 ripe avocado, sliced
- 2 oranges, peeled & segmented
- 2 cups arugula or mixed greens
- ¼ red onion, thinly sliced
- 2 tbsp toasted walnuts or almonds
- 2 tbsp crumbled feta cheese (optional)
For the dressing:
- 3 tbsp extra virgin olive oil
- 1 tbsp fresh orange juice
- 1 tbsp lemon juice
- 1 tsp honey (or maple syrup for vegan)
- 1 tsp Dijon mustard
- Salt & black pepper to taste
🍳 Instructions
- Prepare the beets
Roast at 200°C (400°F) for 35–40 minutes wrapped in foil, or boil until fork-tender. Let cool, then slice. - Assemble the base
On a large plate or bowl, spread the arugula or mixed greens. - Layer the goodness
Add beet slices, avocado, orange segments, and red onion. - Add crunch & creaminess
Sprinkle nuts and feta cheese on top. - Make the dressing
Whisk olive oil, orange juice, lemon juice, honey, mustard, salt, and pepper until smooth. - Finish & serve
Drizzle dressing over the salad just before serving. Toss lightly if desired.
