Crispy Chicken & Zucchini Fritters with Creamy Herb Dip
🥗 Ingredients
For the fritters
- 2 cups cooked chicken, finely shredded or minced
- 1 medium zucchini, grated and squeezed dry
- ½ cup grated Parmesan cheese
- ½ cup shredded Mozzarella cheese
- 1 egg
- ½ cup breadcrumbs (panko works best)
- 2 cloves garlic, minced
- 2 tbsp chopped parsley
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 2 tbsp olive oil (for cooking)
For the creamy herb dip
- ½ cup Greek yogurt
- 1 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 tbsp chopped fresh parsley or dill
- 1 small garlic clove, minced
- Salt & pepper to taste

1️⃣ Prepare the mixture
In a large bowl combine:
- shredded chicken
- grated zucchini (well squeezed)
- Parmesan
- mozzarella
- egg
- breadcrumbs
- garlic
- parsley
- salt, pepper, and paprika
Mix until everything is well combined.
2️⃣ Shape the fritters
Form the mixture into small balls or patties (about golf-ball size).
3️⃣ Cook
Heat olive oil in a skillet over medium heat.
Cook the fritters for 3–4 minutes per side until golden brown and crispy.
Alternative: Bake at 400°F (200°C) for 18–20 minutes, flipping halfway.
4️⃣ Make the dip
In a small bowl mix:
- Greek yogurt
- mayonnaise
- lemon juice
- herbs
- garlic
- salt and pepper
Stir until smooth and creamy.
5️⃣ Serve
Arrange the crispy fritters on a plate with the herb yogurt dip in the center, sprinkle with extra parsley, and serve warm.
