Carnivore Fluffy Pancakes (Sugar-Free & Grain-Free)

Soft, thick, and lightly golden — just like the picture, but fully carnivore-friendly. No flour, no sugar, no plants (optional dairy-free version included).


📝 Ingredients (Makes 6–8 small pancakes)

  • 4 large eggs

  • 4 oz (115g) cream cheese, softened

  • 2 tbsp melted butter (plus more for cooking)

  • Pinch of salt

  • 1–2 tbsp powdered erythritol (optional, strict carnivore skip)


👩‍🍳 Instructions

1️⃣ Blend the Batter
Add eggs, cream cheese, melted butter, salt, and optional sweetener to a blender. Blend until completely smooth and slightly frothy.

2️⃣ Heat the Pan
Heat a non-stick skillet over low–medium heat. Add a little butter.

3️⃣ Cook Slowly
Pour small rounds of batter (about 2–3 tbsp each).
Cook on LOW heat for 2–3 minutes until bubbles form and edges set.

4️⃣ Flip Carefully
Gently flip and cook another 1–2 minutes until golden.

5️⃣ Stack & Serve
Stack like the photo. Top with:

  • Melted butter

  • A sprinkle of powdered erythritol (optional)

  • Whipped heavy cream


🔥 Extra Fluffy Tip

Separate eggs. Whip egg whites to soft peaks, then fold into the batter. This makes them thick and airy like soufflé pancakes.

Replace cream cheese with:

  • 2 tbsp beef tallow + 2 tbsp water blended with eggs

Texture will be thinner but still tasty.
