🥩 Carnivore Bread (Fluffy, High-Protein)

Makes 1 loaf (about 22 slices)

Ingredients

  • 12 large eggs

  • 1½ cups full-fat cottage cheese

  • 2 cups pork panko

  • ½ cup (1 stick) salted butter, melted
    (swap butter for tallow if desired)


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Add eggs, cottage cheese, pork panko, and melted butter to a food processor or blender.

  3. Blend until fully combined and smooth.

  4. Pour batter into a non-stick 9×5 loaf pan or a parchment-lined pan.

  5. Bake for 60 minutes, or until a toothpick inserted in the center comes out clean.

  6. Remove from oven and allow bread to cool completely before slicing.

  7. Slice into 22 slices (about ½-inch thick).


To Toast (Highly Recommended)

  • Air fry slices at 400°F for 10 minutes, flipping halfway
    or

  • Toast in a skillet with butter or tallow until golden

Ingredients

  • 12 large eggs

  • 4 cups pork panko

  • 8 tbsp beef tallow
    (or butter for minimal dairy)


Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, whisk eggs.

  3. Add pork panko and tallow; mix thoroughly until evenly combined.

  4. Transfer mixture to a parchment-lined loaf pan.

  5. Bake for 60 minutes, until firm and cooked through.

  6. Cool completely before slicing.
