🍖 Mini Meatloaf Muffins (Family-Favorite Recipe)

Makes: 12–15 mini meatloaves

🧾 Ingredients

  • 2 lb ground beef (80/20 for best juiciness)

  • 1 small onion, finely diced

  • ½ green bell pepper, finely diced

  • 3 cloves garlic, minced

  • 2 large eggs

  • ¾ cup breadcrumbs or crushed crackers

  • ½ cup milk

  • 1½ tsp salt

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1 tsp Italian seasoning (optional)

  • 2 tbsp ketchup (inside the meat mixture)

Optional Topping:

  • ½ cup ketchup or BBQ sauce (brushed on top)


🔥 Instructions

  1. Preheat oven to 375°F (190°C)
    Lightly grease a muffin tin.

  2. Mix wet ingredients
    In a large bowl, whisk together eggs, milk, and ketchup.

  3. Add flavor
    Stir in onion, bell pepper, garlic, salt, pepper, paprika, and seasoning.

  4. Add beef & crumbs
    Gently mix in ground beef and breadcrumbs.
    👉 Don’t overmix — this keeps them tender.

  5. Fill muffin tin
    Pack mixture firmly into each cup, filling to the top.

  6. Top (optional)
    Spoon a little ketchup or BBQ sauce on each.

  7. Bake uncovered
    20–25 minutes, or until internal temp reaches 160°F (71°C).

  8. Rest & serve
    Let sit 5 minutes before removing — they’ll slide right out.
