🍖 Mini Meatloaf Muffins (Family-Favorite Recipe)

🧾 Ingredients

2 lb ground beef (80/20 for best juiciness)

1 small onion, finely diced

½ green bell pepper, finely diced
-
3 cloves garlic, minced
-
2 large eggs
-
¾ cup breadcrumbs or crushed crackers
-
½ cup milk
-
1½ tsp salt
-
1 tsp black pepper
-
1 tsp paprika
-
1 tsp Italian seasoning (optional)
-
2 tbsp ketchup (inside the meat mixture)
Optional Topping:

½ cup ketchup or BBQ sauce (brushed on top)
🔥 Instructions

Preheat oven to 375°F (190°C)
Lightly grease a muffin tin. -
Mix wet ingredients
In a large bowl, whisk together eggs, milk, and ketchup. -
Add flavor
Stir in onion, bell pepper, garlic, salt, pepper, paprika, and seasoning. -
Add beef & crumbs
Gently mix in ground beef and breadcrumbs.
👉 Don’t overmix — this keeps them tender. -
Fill muffin tin
Pack mixture firmly into each cup, filling to the top. -
Top (optional)
Spoon a little ketchup or BBQ sauce on each. -
Bake uncovered
20–25 minutes, or until internal temp reaches 160°F (71°C). -
Rest & serve
Let sit 5 minutes before removing — they’ll slide right out.
