Golden and crispy on the outside, soft and creamy on the inside, these Air Fryer Potato Croquettes are a delicious snack, appetizer, or side dish. They are made with seasoned mashed potatoes, coated in breadcrumbs, and air-fried to perfection with much less oil than traditional deep-fried croquettes.

Ingredients
For the Potato Mixture
2 large potatoes (about 500g), peeled and cubed
½ cup shredded cheddar cheese
2 tablespoons grated Parmesan cheese
1 egg yolk
2 tablespoons chopped fresh parsley
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
Salt and black pepper to taste
For Coating
½ cup all-purpose flour
1 large egg, beaten
1 cup breadcrumbs (Panko works best)
For Air Frying
Olive oil cooking spray
Instructions
Cook the Potatoes
Boil the potatoes in salted water for 12–15 minutes until fork-tender.
Drain thoroughly and allow excess moisture to evaporate for 2 minutes.
Mash until smooth with no lumps.
Make the Croquette Mixture
Add cheddar cheese, Parmesan, egg yolk, parsley, garlic powder, onion powder, paprika, salt, and pepper to the mashed potatoes.
Mix until everything is well combined.
Refrigerate the mixture for 30 minutes to make shaping easier.
Shape the Croquettes
Scoop about 2 tablespoons of mixture.
Shape into small cylinders or oval croquettes.
Place on a tray lined with parchment paper.
Bread the Croquettes
Roll each croquette in flour.
Dip into the beaten egg.
Coat completely with breadcrumbs.
Arrange on a plate and lightly spray with cooking oil.
Air Fry
Preheat the air fryer to 390°F (200°C) for 3 minutes.
Place croquettes in a single layer, leaving space between them.
Air fry for 10–12 minutes.
Flip halfway through cooking and spray lightly with oil if needed.
Cook until golden brown and crispy.
