Air Fryer Stuffed Chicken Breasts
Ingredient:
For the Filling:
Two tablespoons of pure olive oil
Diced red onion, ½ cup
Diced red bell pepper, ½ cup
½ cup of fresh mushrooms, chopped
½ cup of freshly chopped spinach
one tsp finely chopped garlic
One-half tsp dried Italian spice
To taste, add salt and ground black pepper.
½ cup of feta cheese in crumbles
For The Chicken:Four skinless and boneless chicken breasts
four prosciutto slices
One huge egg that has been beaten
Grated ¾ cup of Parmesan cheese
½ cup of finely ground, dry bread crumbs
1 teaspoon dried parsley
To taste, add salt and ground black pepper.

Guideline:
Prepare the filling: In a small skillet set over medium heat, warm the olive oil. Add onion and cook, stirring, for 3 minutes or until softened. Add the bell pepper and mushrooms, and simmer for approximately 3 minutes, stirring now and again, until softened.
Take off the heat and add the garlic and spinach, stirring until the spinach begins to wilt a little. Add salt, pepper, and Italian seasoning to taste. Give it ten minutes to cool. Add the feta cheese, being careful to break up any big chunks.
Get the chicken ready: After drying off, place the chicken on a chopping board. Using a knife, cut a pocket in each breast by slicing parallel to the cutting board through the thickest part of the breast, leaving about 1 inch at each tip. Take cautious not to cut through the breast’s weakest edge completely.
If preheating is advised by the manufacturer, preheat an air fryer to 370 degrees Fahrenheit (190 degrees Celsius).
Slices of prosciutto should be separated and placed on a clean surface. Top each slice with two teaspoons of filling, then wrap the prosciutto around the filling to form an oblong bundle. Place a bundle inside each cut chicken breast and use a few toothpicks to seal the opening.
Transfer the whisked egg into a small bowl. In another shallow bowl, mix together Parmesan cheese, bread crumbs, parsley, salt, and pepper. Each filled chicken breast is dipped in beaten egg and then coated with a combination of bread crumbs. Place in the air fryer basket after giving each side a quick cooking spray application.
Cook the chicken for about 15 minutes on each side in the preheated air fryer, or until browned. If you stick an instant-read thermometer in the middle of the meat, it should read at least 165 degrees Fahrenheit (74 degrees Celsius).
Tip:
In the air fryer that has been prepared, cook the chicken for approximately 15 minutes on each side, or until browned. An instant-read thermometer inserted in the centre of the meat should register a minimum temperature of 165 degrees Fahrenheit, or 74 degrees Celsius.
