Instructions:
Start by adding the self-raising flour and caster sugar into a large mixing bowl. Mix them together so the sugar is evenly distributed through the flour. Next, add the cold butter chunks. Using your fingertips, gently rub the butter into the flour mixture until it resembles fine breadcrumbs. This step is important because it gives the scones their soft, crumbly texture.
Once the mixture looks sandy, add in the currants and stir them through so they are evenly spread.
