Layered Sweet Potato & Feta Bake with Walnut & Cranberry Drizzle
This delicious layered bake is the perfect mix of sweet, salty, creamy, and crunchy. Soft sweet potatoes are baked with feta cheese, topped with toasted walnuts, and finished with a sweet-tangy cranberry honey drizzle. It’s great as a side dish or even a light main meal.
Ingredients
For the Bake:
- 4 medium sweet potatoes (thinly sliced)
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
For Topping:
- ¾ cup feta cheese (crumbled)
- ½ cup walnuts (toasted)
For Cranberry Drizzle:
- ½ cup cranberry sauce
- 2 tbsp honey
- 1 tbsp lemon juice
Garnish:
- Fresh thyme
- Cracked black pepper
Instructions
First, preheat your oven to 200°C (400°F). Lightly grease a baking dish with oil or butter so the potatoes don’t stick.
Wash, peel, and slice the sweet potatoes into thin, even rounds. Try to keep them the same thickness so they cook evenly.
Now start layering. Place one layer of sweet potato slices in the baking dish, slightly overlapping them. Drizzle a little olive oil on top, then sprinkle salt, black pepper, and dried thyme.
Next, add some crumbled feta cheese over the layer. Repeat the same process—sweet potatoes, oil, seasoning, and feta—until all ingredients are used. Finish with a little feta on top.
Cover the dish with foil and bake for 30 minutes. This helps the potatoes soften properly.
After 30 minutes, remove the foil and bake again for 15–20 minutes. The top should become slightly golden, and the potatoes should be soft when pierced with a fork.
While the bake is finishing, prepare the cranberry drizzle. Take a small pan, add cranberry sauce, honey, and lemon juice. Heat on low flame and stir until smooth and slightly glossy. Do not overcook.
Once the baking is done, remove it from the oven and let it rest for 5 minutes.
Now sprinkle toasted walnuts on top. This adds a nice crunchy texture.
Finally, drizzle the warm cranberry sauce over the entire dish. Garnish with fresh thyme and a little cracked black pepper.
Serving
