🌽 Charred Corn with Whipped Feta, Chili Lime & Fresh Cilantro
🛒 Ingredients
For the Corn:
- 3 cups (450 g) corn kernels (fresh, canned, or frozen & thawed)
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
For the Whipped Feta:
- 1 cup (200 g) feta cheese
- ¼ cup (60 g) Greek yogurt
- 1 tbsp olive oil
- 1–2 tbsp lemon juice (or lime juice)
- 1 small garlic clove (optional)
For Topping:
- ½ tsp chili flakes (or chili powder, to taste)
- Zest of 1 lime
- Juice of 1 lime
- 2 tbsp fresh cilantro, chopped
- Extra olive oil (for drizzling)
👩🍳 Instructions
1. Char the Corn
- Heat a large skillet or grill pan over medium-high heat
- Add olive oil, then corn kernels
- Cook for 8–10 minutes, stirring occasionally, until corn is golden and slightly charred
- Season with salt and black pepper
- Remove from heat
2. Make the Whipped Feta
- In a blender or food processor, combine:
- feta cheese
- Greek yogurt
- olive oil
- lemon/lime juice
- garlic (optional)
- Blend until smooth, creamy, and spreadable
3. Assemble
- Spread whipped feta onto a serving plate
- Spoon the warm charred corn over the top
4. Add Flavor Boost
- Sprinkle chili flakes
- Add lime zest and fresh lime juice
- Top with chopped cilantro
- Drizzle a little olive oil
