🥗 Greek Chickpea Salad with Tzatziki Dressing
🛒 Ingredients
For the salad:
- 1½ cups cooked chickpeas (or 1 can, rinsed & drained)
- 1 cup cucumber (diced)
- 1 cup cherry tomatoes (halved)
- ¼ cup red onion (thinly sliced)
- ½ cup bell pepper (any color, chopped)
- ¼ cup kalamata olives (sliced)
- ½ cup feta cheese (crumbled)
- 2 tbsp fresh parsley (chopped)
For the tzatziki dressing:
- 1 cup Greek yogurt
- ½ cucumber (grated & squeezed dry)
- 2 cloves garlic (minced)
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp fresh dill (or mint)
- Salt & black pepper to taste

1. Make the tzatziki dressing
- In a bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, and dill.
- Season with salt and pepper.
- Mix well and chill for 10–15 minutes for best flavor.
2. Prepare the salad
- In a large bowl, add chickpeas, cucumber, tomatoes, onion, bell pepper, olives, and parsley.
- Toss gently to combine.
3. Assemble
- Pour the tzatziki dressing over the salad and mix lightly.
- Top with crumbled feta cheese.
