Warm Potato and Mushroom Salad
A rustic, flavorful salad that celebrates the earthy goodness of fresh potatoes and mushrooms! Perfect for a light lunch or side dish!
Ingredients:
– 21 oz potatoes (firm variety)
– 8.8 oz fresh button mushrooms
– 1 small red onion or shallot
– 3 tbsp olive oil
– 1 tbsp wine or balsamic vinegar
– 1 tsp whole grain mustard (optional)
– Small handful fresh parsley, chopped
– Salt and pepper
– Optional: Arugula or mâche leaves
Cooking Instructions:
1. Potato Preparation
– Boil potatoes with skin for 20-25 minutes
– Drain and let cool slightly
– Peel and cut into rounds or cubes
2. Mushroom Magic
– Clean mushrooms gently
– Slice thinly
– Option: Eat raw or sauté 2-3 minutes
3. Vinaigrette Blend
– Mix olive oil, vinegar, mustard
– Season with salt and pepper
4. Salad Assembly
