🛒 Ingredients (4 hearty servings)

1½ lb (700 g) fatty ground beef or chuck roast, cut small

4 cups beef bone broth (homemade preferred)

1 cup heavy cream (optional but highly recommended)

4 oz cream cheese, cubed

2 tbsp butter or beef tallow

1 tsp sea salt (adjust to taste)

½ tsp black pepper (optional)

½ tsp garlic powder (optional)

½ tsp onion powder (optional)

Optional add-ins (choose any):

½ cup shredded cheddar or mozzarella

2 egg yolks (for extra richness)

🔥 Instructions

Brown the meat
In a large pot, melt butter/tallow over medium heat. Add beef and cook until browned and juicy. Do not drain the fat. -
Add broth
Pour in bone broth. Bring to a gentle simmer for 10–15 minutes to build flavor. -
Make it creamy
Lower heat. Add cream cheese cubes and heavy cream. Stir until fully melted and smooth. -
Season
Add salt and optional seasonings. Taste and adjust. -
Optional egg yolk boost (VERY filling)
Whisk egg yolks in a bowl. Slowly ladle in hot soup while whisking (to temper), then stir back into pot. Heat gently—do NOT boil. -
Finish
Stir in shredded cheese if using. Simmer 2–3 more minutes until thick and velvety.
