Ingredients (Strict Carnivore)

2 lbs (900g) 80/20 ground beef

8–12 slices whole-milk mozzarella or provolone or white American (animal-based, no additives if possible)

1–2 tsp sea salt

Optional (if tolerated on carnivore):

Beef tallow for cooking

Egg (to bind patties, optional)

Equipment

Cast iron skillet or flat-top griddle

Metal spatula

Lid (for melting cheese)

Step 1: Form Smash Patties

Divide beef into 6–8 loose balls (about 3–4 oz each).

Do NOT overwork the meat.

Preheat skillet on high until very hot.

Add a small amount of beef tallow if needed.

Step 2: Smash & Sear

Place beef ball onto hot surface.

Smash firmly with spatula into thin patty.

Salt immediately.

Cook 2–3 minutes until deep brown crust forms.

Flip once.

Step 3: Cheese Melt

Immediately add cheese slice to each patty after flipping.

Cover pan with lid to create steam.

Let cheese melt aggressively (30–60 seconds).
