Sugar-Free Carnivore Vanilla Cake
High-Protein • Low-Carb • Flourless
This Sugar-Free Carnivore Vanilla Cake is a rich, soft, and satisfying dessert made without flour, sugar, or plant ingredients. It’s high in protein, naturally low in carbs, and perfect for anyone following a carnivore, keto, or animal-based lifestyle. Lightly sweet, vanilla-forward, and surprisingly fluffy — you’d never guess it’s completely grain-free.
Ingredients
-
6 large eggs (room temperature)
-
8 oz cream cheese, softened
-
¼ cup melted butter or ghee
-
¼–½ cup powdered allulose or monk fruit (optional, to taste)
-
1 tablespoon vanilla extract
-
½ teaspoon salt
(Optional for extra protein)
-
¼ cup unflavored whey protein isolate or egg white protein
Instructions
-
Preheat oven to 325°F (165°C). Grease an 8-inch round cake pan or line with parchment paper.
-
In a blender or food processor, add eggs, cream cheese, butter, sweetener (if using), vanilla, and salt.
-
Blend until completely smooth and creamy. Scrape sides if needed.
-
If using protein powder, blend it in last until just combined.
-
Pour batter into the prepared pan and tap gently to remove air bubbles.
-
Bake for 40–45 minutes, until the center is set and the top is lightly golden.
-
Turn oven off, crack the door, and let cake cool inside for 10–15 minutes to prevent sinking.
-
Remove and cool completely before slicing.
Optional Carnivore Toppings
-
Whipped heavy cream (unsweetened or lightly sweetened)
-
Cream cheese frosting (cream cheese + butter + sweetener)
-
Melted butter drizzle
