 Description
This soft Turkish flatbread is light, fluffy on the inside, and beautifully golden on the outside. Brushed with a rich egg wash and topped with sesame and nigella seeds, it has a glossy crust and a mild, comforting flavor. Traditionally enjoyed during Ramadan, this bread pairs perfectly with soups, dips, cheese, or grilled dishes.
 Ingredients
Dough

3½ cups (440 g) all-purpose flour

1 tbsp sugar

1½ tsp salt

1 tbsp instant yeast

1¼ cups warm water (about 40°C / 105°F)

Instructions
1. Prepare the Dough

In a large bowl, mix warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.

Add olive oil, salt, and flour gradually.

Knead for 8–10 minutes until soft and elastic.

Cover and let rise in a warm place for 1 hour, or until doubled in size.
2. Shape the Bread

Punch down the dough and divide into 3–4 equal portions.

Shape into round flat discs (about 1–1.5 cm thick).

Place on a parchment-lined baking tray.

Cover and rest for 20 minutes.
3. Prepare Egg Wash
Mix egg yolk, milk (or yogurt), and olive oil until smooth.
4. Decorate

Gently press fingertips into the dough to create a pattern.

Brush generously with egg wash.

Sprinkle sesame and nigella seeds on top.
5. Bake

Preheat oven to 220°C (430°F)
