Ingredients
2 cups fresh pineapple, diced
1 large cucumber, sliced (or halved & sliced)
¼ red onion, thinly sliced
Dressing
1–2 tbsp fresh lemon or lime juice (to taste)
1 tbsp olive oil
Salt, to taste
Black pepper, to taste
Fresh Herbs
1–2 tbsp fresh parsley or cilantro, chopped
Instructions
Prepare the produce
Dice pineapple into bite-size pieces.
Slice cucumber and thinly slice red onion.
Mix the salad
In a large bowl, combine pineapple, cucumber, and red onion.
Make the dressing
Drizzle lemon or lime juice and olive oil over the salad.
Season with salt and black pepper.
Toss & finish
Gently toss to coat.
Sprinkle with fresh herbs.
Chill & serve
