Pineapple Cucumber Salad

Ingredients:
2 cups fresh pineapple, diced
1 large cucumber, thinly sliced or diced
1/4 red onion, thinly sliced
1/4 cup fresh cilantro, chopped
Juice of 1 lime
1 tablespoon honey
Salt and pepper to taste
Optional: 1 small jalapeño, finely chopped (for a kick)
Instructions:
In a large bowl, combine the pineapple, cucumber, red onion, and cilantro.
In a small bowl, whisk together lime juice, honey, salt, and pepper.
Pour the dressing over the salad and gently toss to combine.
If adding jalapeño, stir it in now.
Chill for at least 15–20 minutes before serving for best flavor.
