👩🍳 Instructions
- Marinate the Chicken
In a bowl, toss chicken with olive oil, garlic, oregano, paprika, lemon juice, salt, and pepper. Let marinate for 10–30 minutes. - Roast the Sweet Potatoes
Preheat oven to 400°F (200°C).
Toss sweet potatoes with olive oil, paprika, garlic powder, and salt.
Spread on a baking sheet and roast for 25–30 minutes, flipping halfway, until golden and tender. - Cook the Chicken
Heat a skillet over medium heat.
Cook chicken for 6–8 minutes, stirring occasionally, until fully cooked and lightly golden. - Make the Creamy Garlic Sauce
Whisk all sauce ingredients together until smooth. Add water or milk to reach desired consistency. - Assemble the Bowl
Add sweet potatoes and chicken to a bowl. Drizzle generously with creamy garlic sauce. Top with greens and herbs if desired.
💡 Notes
- Chicken thighs give extra juiciness; breasts keep it leaner.
- The sauce thickens in the fridge—thin before serving if needed.
- This bowl tastes even better the next day.
🔥 Tips for Best Results
- Roast sweet potatoes on parchment for easy cleanup.
- Don’t overcrowd the pan when cooking chicken—this helps browning.
