It’s simple to prepare, packed with nutrients, and perfect for a wholesome family dinner or meal prep.
Ingredients
- 3 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 medium zucchinis, sliced into rounds
- 1 pint cherry tomatoes, halved
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 3 garlic cloves, minced
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- 1/2 cup crumbled feta cheese
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
- Prepare the marinade: In a large bowl, whisk together olive oil, garlic, oregano, basil, thyme, salt, and pepper.
- Combine ingredients: Add chicken, zucchini, tomatoes, bell pepper, and red onion to the bowl. Toss until everything is evenly coated.
- Bake: Spread the mixture evenly in the prepared baking dish. Bake uncovered for 25–30 minutes, stirring once halfway, until chicken is cooked through and vegetables are tender.
- Add feta: Sprinkle crumbled feta over the top and return to the oven for 5 more minutes, just until softened.
- Garnish & serve: Remove from oven, sprinkle with fresh parsley if desired, and serve warm.
Recipe Notes
- Chicken is fully cooked when it reaches an internal temperature of 165°F (74°C).
- Zucchini releases moisture as it cooks—don’t overcrowd the pan to avoid sogginess.
- This dish pairs well with rice, quinoa, couscous, or crusty whole-grain bread.
