Healthy Oatmeal Apple Breakfast Recipe
Ingredients:
1 cup oatmeal (quick or rolled oats)
2 apples, grated or finely chopped
2 eggs
150g plain yogurt (about â…” cup)
1 teaspoon baking powder
½ teaspoon cinnamon (optional but amazing!)
Pinch of salt
Optional: a handful of raisins, chopped nuts, or chia seeds
Instructions:
Prepare the Ingredients:
Grate or finely chop the apples. Set aside.
In a medium-sized bowl, whisk the eggs and plain yogurt until well combined.
If using, add cinnamon and salt to the egg and yogurt mixture.
Mix the Dry Ingredients:
In a separate bowl, combine the oatmeal, baking powder, and any optional ingredients like raisins, chopped nuts, or chia seeds.
Combine:
Add the grated apples to the dry oatmeal mixture.
Pour the wet egg and yogurt mixture into the bowl with the dry ingredients. Stir everything together until well combined.
Cook:
Heat a non-stick skillet or pan over medium heat and lightly grease it with a bit of olive oil or cooking spray.
Spoon portions of the mixture onto the pan, flattening each portion into a small patty.
Cook for about 3-4 minutes on each side until golden brown and cooked through.
Serve:
Serve the oatmeal apple patties warm. You can enjoy them as is or top with a little extra yogurt, honey, or nuts.
