Grilled Pineapple Chicken with Veggies 

 Ingredients
For the Chicken & Marinade

600–700g boneless chicken breast (cut into fillets or cubes)

1 cup fresh pineapple chunks (or rings)
-
3 tbsp soy sauce
-
2 tbsp olive oil
-
2 tbsp honey or brown sugar
-
1 tbsp lemon or lime juice
-
2 cloves garlic (minced)
-
1 tsp grated ginger
-
½ tsp black pepper
-
½ tsp paprika
-
½ tsp chili flakes (optional)
-
Salt to taste
For the Veggies
-
1 red bell pepper (sliced)
-
1 yellow bell pepper (sliced)
-
1 medium zucchini (sliced)
-
1 red onion (cut into wedges)
-
1 cup broccoli florets
-
1 tbsp olive oil
-
Salt & pepper to taste
-
½ tsp Italian seasoning or mixed herbs
 Instructions
Step 1: Marinate the Chicken

In a bowl, mix soy sauce, olive oil, honey, lemon juice, garlic, ginger, pepper, paprika, chili flakes, and salt.

Add chicken and pineapple.

Toss well and marinate for 30 minutes to 2 hours.
Step 2: Prepare the Veggies

In a separate bowl, toss veggies with olive oil, salt, pepper, and herbs.

Set aside.
Step 3: Grill the Chicken & Pineapple
Grill Pan / BBQ:
-
Heat grill pan or BBQ to medium-high.
-
Grill chicken for 4–5 minutes per side until cooked through.

Grill pineapple slices/chunks until caramelized (about 2–3 minutes per side).
Oven Option:
-
Preheat oven to 200°C (400°F).
-
Bake chicken and pineapple for 20–25 minutes.
Step 4: Cook the Veggies
-
Sauté veggies in a pan for 5–7 minutes until tender-crisp
OR -
Grill them alongside chicken.
Step 5: Serve
Plate the grilled chicken, caramelized pineapple, and veggies together. Garnish with fresh herbs or sesame seeds if desired.
