🛒 Ingredients

For the salad:

  • 1½ cups cooked chickpeas (or 1 can, rinsed & drained)
  • 1 cup cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • ¼ cup red onion (thinly sliced)
  • ½ cup bell pepper (any color, chopped)
  • ¼ cup kalamata olives (sliced)
  • ½ cup feta cheese (crumbled)
  • 2 tbsp fresh parsley (chopped)

For the tzatziki dressing:

  • 1 cup Greek yogurt
  • ½ cucumber (grated & squeezed dry)
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill (or mint)
  • Salt & black pepper to taste
