- 2 lbs boneless, skinless chicken thighs
- 6 garlic cloves, thinly sliced

- 6–8 oz scallions (about 1 bunch), thinly sliced
- whites and greens separated
Broth & Seasoning
- 8–10 cups chicken broth (low sodium preferred)
- 2 tbsp neutral oil (or sesame oil for extra flavor)
- 2 tbsp soy sauce (or tamari)
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper or white pepper
Noodles & Optional Add-Ins
- 8 oz rice noodles or wheat noodles
- Chili oil or chili crisp (optional)
- Carrots or mushrooms (optional)
- Fresh cilantro (optional)
Instructions
- Sear the aromatics
Heat oil in a large pot over medium heat. Add scallion whites, garlic, and ginger. Sauté 1–2 minutes until fragrant (do not brown). - Cook the chicken
Add chicken thighs whole. Stir to coat with aromatics. Cook 3–4 minutes. - Build the broth
Pour in chicken broth, soy sauce, salt, and pepper. Bring to a gentle boil, then reduce to a simmer. - Simmer
Cover and cook for 25–30 minutes until chicken is tender and fully cooked. - Shred the chicken
Remove chicken, shred with forks, and return to pot. - Cook noodles
Add noodles and cook according to package instructions (usually 3–5 minutes). - Finish
Add scallion greens and optional chili oil. Taste and adjust seasoning. - Serve hot
Garnish with extra scallions or herbs if desired.
