Ingredients
– 2 cups rolled oats
– 1 cup mixed nuts (almonds, peanuts, etc.), chopped
– ½ cup dried cranberries or raisins
– ½ cup peanut butter (or almond butter)
– ¼ cup honey or maple syrup
– 1 tsp vanilla extract
– 200 g dark chocolate (for coating)
– 1 tbsp coconut oil (optional, for smoother chocolate)
Instructions
1. Mix dry ingredients: In a large bowl combine oats, chopped nuts, and dried fruit.
2. Make the binder: In a saucepan over low heat, melt peanut butter with honey and vanilla, stirring until smooth.
3. Combine: Pour the binder over the dry mix and stir until everything is evenly coated.
4. Shape: Press the mixture firmly into a lined 9×9 inch baking pan.
5. Chill: Refrigerate for 30–40 minutes until firm.
6. Cut: Remove from pan and cut into bars or squares.
7. Chocolate coating: Melt chocolate with coconut oil (if using). Dip each bar into the chocolate or drizzle it over the top.
8. Set: Let the chocolate harden in the fridge for 15–20 minutes.
Tips
– You can swap cranberries for other dried fruits like apricots or cherries.
– For extra crunch, toast the oats and nuts lightly before mixing.
– Store bars in an airtight container in the fridge for up to 1 week.
