Crustless Spinach & Feta Quiche

Ingredients
4 large eggs
1 cup fresh spinach, chopped
½ cup red onion, finely chopped
½ cup feta cheese, crumbled
½ cup milk or cream
¼ tsp garlic powder
¼ tsp black pepper
¼ tsp salt (or to taste)
1 tbsp olive oil (for sautéing)
Fresh parsley or thyme (optional, for garnish)
Instructions
Preheat oven
Preheat to 180°C (350°F). Lightly grease a small baking dish or pie plate.
Sauté vegetables
Heat olive oil in a pan over medium heat.
Add red onion and cook for 2–3 minutes until softened.
Add spinach and cook just until wilted. Remove from heat.
Whisk eggs
In a bowl, whisk eggs with milk (or cream), garlic powder, salt, and black pepper.
Assemble
Spread the spinach-onion mixture evenly in the baking dish.
Sprinkle feta cheese on top.
Pour egg mixture over everything.
Bake
Bake uncovered for 30–35 minutes, or until set in the center and lightly golden on top.
Rest & serve
Let cool for 5 minutes. Garnish with fresh herbs if desired. Slice and serve warm.
