🥐 Creamy Spinach Puff
🛒 Ingredients
For the filling:
- 2 cups fresh spinach (chopped) or frozen (thawed & squeezed dry)
- 1 tbsp olive oil
- 2 cloves garlic (minced)
- 1 small onion (finely chopped)
- ½ cup cream cheese (softened)
- ¼ cup heavy cream (or milk for lighter version)
- ½ cup shredded mozzarella (or cheddar)
- ¼ cup crumbled feta (optional, for Mediterranean touch)
- Salt & black pepper to taste
- ½ tsp chili flakes (optional)
For the pastry:
- 1 sheet puff pastry (thawed)
- 1 egg (for egg wash)
- 1 tbsp sesame seeds (optional)
👩🍳 Instructions
1. Prepare the filling
- Heat olive oil in a pan.
- Sauté onion until soft, then add garlic.
- Add spinach and cook until wilted (or heated through if frozen).
- Lower heat and mix in cream cheese, cream, mozzarella, and feta.
- Season with salt, pepper, and chili flakes.
- Cook until creamy and thick. Let it cool completely.
2. Prepare the puff pastry
- Preheat oven to 200°C (390°F)
- Roll out puff pastry slightly and cut into squares (about 3–4 inches each).
3. Assemble
- Add 1–2 tbsp filling in the center of each square.
- Fold into rectangles or triangles and seal edges (use a fork if needed).
4. Bake
- Place on a lined baking tray.
- Brush with beaten egg and sprinkle sesame seeds.
- Bake for 18–22 minutes or until golden brown and puffed.
