Instructions

Cook the potatoes
Heat olive oil in a large skillet over medium heat. Add potatoes and cook for 8–10 minutes, stirring occasionally, until lightly golden and just tender. Remove and set aside. -
Brown the beef
In the same skillet, add ground beef and onion. Cook until beef is browned and onion is soft. Drain excess fat if needed. -
Add vegetables & seasoning
Stir in garlic and bell peppers. Cook 3–4 minutes until slightly softened. Season with paprika, garlic powder, onion powder, salt, and pepper. -
Make it creamy
Pour in beef broth and bring to a gentle simmer. Return potatoes to the skillet and cook 5 minutes. -
Finish with cheese & sour cream
Reduce heat to low. Stir in sour cream and shredded cheddar until melted and creamy. -
Serve
Garnish if desired and serve hot.
