Ingredients (Serves 4)
- 4 chicken breasts
- 2 cups zucchini, sliced
- 2 cups cherry tomatoes, halved
- 1 cup red bell pepper, sliced
- ½ cup red onion, sliced
- ¼ cup extra-virgin olive oil
- 2 garlic cloves, minced
- ½ tsp dried oregano
- ½ tsp dried thyme
- Salt and black pepper, to taste
- ¼ cup fresh parsley, chopped
- ¼ cup fresh basil, chopped
- ½ cup feta cheese, crumbled
Instructions
- Preheat oven to 200°C (400°F). Lightly grease a large baking dish.
- Prepare vegetables
In a large bowl, combine zucchini, tomatoes, bell pepper, red onion, garlic, olive oil, oregano, thyme, salt, and pepper. Toss well. - Assemble dish
Spread vegetables evenly in the baking dish. Nestle chicken breasts among the vegetables. - Season chicken
Drizzle remaining oil over chicken and season with salt and pepper. - Bake
Cover loosely with foil and bake for 25 minutes. - Add feta
Remove foil, sprinkle feta cheese over the dish, and return to oven uncovered. - Finish baking
Bake another 10–15 minutes, until chicken is cooked through and vegetables are tender. - Garnish & serve
Sprinkle with fresh parsley and basil before serving.
