Carnivore Yellow “Mac & Cheese” (No Pasta, No Dye) 🧀💛

Ingredients:

  • 6 chicken thighs (boneless or bone-in)

  • 1–2 tsp minced garlic

  • Salt & black pepper, to taste

  • 2 tbsp butter

  • ¾–1 cup heavy cream

  • 1½–2 cups shredded cheddar cheese

  • 2–4 tbsp cream cheese (optional, for extra thickness)

  • ¼ cup grated Parmesan cheese (for topping)

  • 3 slices ham, thinly sliced

  • ¼–½ tsp turmeric powder (for natural yellow color)


Instructions:

  1. Cook the chicken

    • Place chicken thighs in a cast-iron skillet.

    • Season with garlic, salt, and pepper.

    • Cover and simmer on medium-low heat, flipping occasionally, until fully cooked and tender (about 20–25 minutes).

  2. Shred

    • Remove chicken and shred using forks or a stand mixer.

    • Set aside.

  3. Make the cheese sauce

    • In the same pan, melt butter over low heat.

    • Add heavy cream and stir gently.

    • Slowly add shredded cheddar, turmeric, and cream cheese (if using).

    • Stir continuously until smooth, thick, and bubbly.

  4. Add ham

    • Stir sliced ham into the cheese sauce and simmer for 2–3 minutes.

  5. Combine

    • Add shredded chicken to the cheese sauce and mix well.

    • Transfer to an oven-safe dish if needed.

  6. Top & broil

    • Sprinkle Parmesan evenly over the top.

    • Broil on high for 2–4 minutes until golden and crispy.

  7. Serve

    • Let rest for 5 minutes, then serve hot and gooey.
