Carnivore Yellow “Mac & Cheese” (No Pasta, No Dye) 🧀💛
Ingredients:

6 chicken thighs (boneless or bone-in)

1–2 tsp minced garlic

Salt & black pepper, to taste

2 tbsp butter
-
¾–1 cup heavy cream
-
1½–2 cups shredded cheddar cheese
-
2–4 tbsp cream cheese (optional, for extra thickness)

¼ cup grated Parmesan cheese (for topping)

3 slices ham, thinly sliced
-
¼–½ tsp turmeric powder (for natural yellow color)
Instructions:

Cook the chicken

Place chicken thighs in a cast-iron skillet.

Season with garlic, salt, and pepper.

Cover and simmer on medium-low heat, flipping occasionally, until fully cooked and tender (about 20–25 minutes).

Shred
-
Remove chicken and shred using forks or a stand mixer.

Set aside.

Make the cheese sauce

In the same pan, melt butter over low heat.

Add heavy cream and stir gently.
-
Slowly add shredded cheddar, turmeric, and cream cheese (if using).

Stir continuously until smooth, thick, and bubbly.

Add ham

Stir sliced ham into the cheese sauce and simmer for 2–3 minutes.

Combine

Add shredded chicken to the cheese sauce and mix well.

Transfer to an oven-safe dish if needed.

Top & broil

Sprinkle Parmesan evenly over the top.

Broil on high for 2–4 minutes until golden and crispy.

Let rest for 5 minutes, then serve hot and gooey.
