Carnivore Tacos with Colby Jack Cheese Shells
Ingredients (Serves 4 / 6–8 tacos)
Cheese Taco Shells

2 cups shredded Colby Jack cheese (block-shredded works best)
Meat Filling

1 lb (450g) ground beef (80/20)

1 tsp salt (or to taste)

½ tsp black pepper (optional)

½ tsp garlic powder (optional)
Optional Carnivore Toppings

Shredded cheese
-
Crispy bacon bits
-
Fried eggs
-
Sour cream or heavy cream drizzle
Instructions
1️⃣ Make the Cheese Taco Shells

Preheat oven to 375°F (190°C).

Line a baking sheet with parchment paper.

Place ¼ cup cheese per shell in small circles, flatten slightly.

Bake 6–8 minutes until melted, bubbly, and lightly golden.

Remove from oven and rest 30–60 seconds.

Carefully drape over a spoon handle or folded foil to form taco shape.

Let cool 2–3 minutes until crisp.
2️⃣ Cook the Meat Filling

Heat skillet over medium heat.

Add ground beef and cook until browned.

Season with salt (and optional spices).

Drain excess fat if desired (or keep it for juicier tacos).
3️⃣ Assemble Tacos

Fill cheese shells with hot beef.

Add optional toppings.

Serve immediately while shells are crispy.
