🧾 Ingredients

  • 2 ribeye steaks (1–1½ inches thick)

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon salt (or to taste)

  • ½ teaspoon black pepper

  • 2 tablespoons butter

  • 2 garlic cloves, smashed (optional but recommended)

  • Fresh rosemary or thyme (optional)

Step 1: Prep the Steaks

  1. Remove ribeye steaks from the refrigerator 30–40 minutes before cooking to bring them to room temperature.

  2. Pat steaks completely dry with paper towels (this helps form a perfect crust).


Step 2: Season

  1. Rub both sides of each steak with olive oil.

  2. In a small bowl, mix garlic powder, onion powder, salt, and black pepper.

  3. Season steaks generously on both sides, pressing the seasoning into the meat.


Step 3: Sear the Steaks

  1. Heat a cast-iron skillet over high heat until very hot.

  2. Place steaks in the skillet and sear 2–3 minutes per side without moving them.

  3. Flip and sear the second side until a deep golden-brown crust forms.


Step 4: Butter Baste

  1. Reduce heat to medium-low.

  2. Add butter, smashed garlic, and rosemary or thyme to the pan.

  3. Tilt the pan slightly and spoon the melted butter over the steaks for 1–2 minutes.


Step 5: Finish Cooking

  • For medium-rare: internal temp 125–130°F (52–54°C)

  • For medium: internal temp 135°F (57°C)

(Use a meat thermometer for best results.)


Step 6: Rest & Serve

  1. Remove steaks from the pan and place on a plate.

  2. Let rest 5–10 minutes to lock in juices.

  3. Slice against the grain and serve hot.
