🥚 Carnivore Mayo Recipe (Beef Tallow Mayo / Egg Yolk Mayo)

Ingredients

  • 2 egg yolks (room temperature)

  • 1 cup melted beef tallow (cooled but still liquid)

  • 1 tsp salt (optional, to taste)

  • 1–2 tsp lemon juice or apple cider vinegar (optional — strict carnivore can skip)

Tip: Make sure egg yolks & tallow are close to the same temperature — helps prevent separation.


🔪 Instructions

  1. In a bowl, add egg yolks and salt (and lemon/vinegar if using).

  2. Whisk or blend with hand blender for 10–15 seconds.

  3. Slowly drizzle in melted tallow while blending.

    • Add just a few drops at first until it thickens.

    • Then pour a thin stream while blending continuously.

  4. Blend until creamy & thick like classic mayo.

  5. Store in a glass jar up to 5–7 days in the refrigerator.

Garlic Mayo ¼ tsp garlic powder (if allowed)
Bacon Mayo replace some tallow with melted bacon fat
Smoky Mayo ¼ tsp smoked salt
Pure Carnivore only yolks + tallow + salt

🧊 Storage Tips

  • If mayo gets too thick after refrigeration, warm the jar 5–10 seconds in microwave or place in warm water.

  • If it separates, blend again with 1 extra egg yolk.
