🍨 Carnivore Ice Cream — Rich, Creamy & Nutrient-Dense

Step 1: Heat the cream
In a medium saucepan, gently heat the heavy cream over medium-low heat until warm but not boiling. Remove from heat.
Step 2: Whisk egg yolks
In a separate bowl, whisk the egg yolks until smooth. Slowly temper them by adding a few tablespoons of the warm cream, whisking constantly. Gradually add the rest of the cream while continuing to whisk.
Step 3: Cook the custard
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon (do not boil).
Step 4: Add flavorings
Remove from heat and stir in sea salt, honey (if using), and vanilla extract (if using). Taste and adjust sweetness as desired.
Step 5: Chill the mixture
Pour the custard through a fine mesh strainer into a bowl to remove any cooked egg bits. Let it cool to room temperature, then cover and refrigerate for at least 2 hours, or until thoroughly chilled.
Step 6: Freeze the ice cream

With an ice cream maker: Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions.

Without an ice cream maker: Pour the mixture into a shallow freezer-safe container. Freeze for 1 hour, then stir vigorously to break up ice crystals. Repeat every 30–60 minutes until creamy and frozen.
Step 7: Store & serve
Transfer the ice cream to an airtight glass container and freeze until firm. Serve straight from the freezer for a rich, creamy treat.
