Carnivore Chicken Salad (Creamy & High-Protein)

🥣 Carnivore Chicken Salad (Creamy & High-Protein)

Ingredients

  • 4 cups cooked chicken, finely shredded
(rotisserie or boiled — dark & white meat mixed gives best texture)

  • 1 cup homemade carnivore mayo (recipe below)
(or use store-bought if ingredients are clean)

  • 3 boiled eggs, finely chopped (adds richness + creaminess)

  • 2–4 tbsp chicken drippings / broth gel (optional but increases flavor & moisture)

  • ½ tsp salt, or to taste

  • ½ tsp black pepper (optional — strict carnivore skip)

  • ½ tsp smoked paprika (optional — not strict carnivore)

  • Optional add-ins for strict carnivores: chopped crispy chicken skin, crumbled pork rinds, shredded cheese

🔥 Homemade Carnivore Mayo

(gives the thick texture like in your picture)

Blend together:

  • 2 whole eggs

  • 1 cup neutral animal fat (melted tallow, bacon grease, or ghee)

  • 1 tsp Dijon mustard (optional — skip for strict)

  • 1 tsp salt

Blend on low and slowly drizzle fat until thick.

👨‍🍳 Instructions

  1. Shred your cooked chicken very fine — using a stand mixer or hand mixer makes it smooth and creamy.

  2. Add chopped boiled eggs and mix again to combine.

  3. Add carnivore mayo, mix until creamy.

  4. Add chicken drippings or broth gel 1 tbsp at a time until it reaches your preferred thickness.

  5. Taste and adjust salt.

  6. Store in airtight containers up to 5 days in the fridge.
