Ingredients

  • 2 cups shredded low-moisture mozzarella

  • ½ cup shredded cheddar (or more mozzarella)

  • 1 large egg

  • 2 oz cream cheese, softened

  • 2 tbsp pork rinds, crushed into fine crumbs (binder – optional but recommended)

  • Pinch of salt (optional)

Strict carnivore option: Use only mozzarella + egg + cream cheese.


Instructions

  1. Preheat oven to 400°F (205°C)
    Line a baking sheet with parchment paper.

  2. Mix dough

    • In a bowl, combine all ingredients.

    • Mix until a thick, sticky dough forms.

  3. Form balls

    • Roll into 1–1½ inch balls.

    • Place evenly spaced on baking sheet.

  4. Bake

    • Bake for 12–15 minutes until golden and puffed.

  5. Optional crisp finish

    • Broil for 1–2 minutes for extra crunch.

  6. Cool slightly

    • Let rest 5 minutes—they firm up as they cool.


Alternate Cooking Methods

Air Fryer:

  • 375°F for 8–10 minutes, shake halfway.

Pan-Fried (extra crispy):

  • Fry in beef tallow or butter over medium heat until golden on all sides.


Flavor Variations (Still Carnivore)

  • Stuffed: Add a cube of mozzarella inside each ball.

  • Pepperoni-filled: Hide a pepperoni slice inside.
