Carnivore Canning Meatloaf 🥩🥫
Description
This is a fully carnivore-friendly meatloaf designed for pressure canning. Made with pure meat, eggs, cheese, and animal fat, it’s shelf-stable, high in protein and fat, and melts in your mouth. Perfect for meal prep, emergency storage, or quick carnivore meals without any plant ingredients.
Ingredients (for ~6 pint jars)
-
3 lbs ground beef (or 50/50 beef + pork for more fat)
-
3 large eggs
-
1 cup shredded cheese (optional: cheddar or mozzarella)
-
1–2 tsp salt (adjust to taste)
-
½ tsp black pepper (optional)
-
1–2 tbsp butter or tallow (optional, for extra juiciness)
-
1 cup beef broth (optional, to keep moist in jars)
Instructions
1. Prepare the Meatloaf Mixture
-
In a large bowl, combine ground meat, eggs, cheese (if using), salt, pepper, and optional butter/tallow.
-
Mix gently but thoroughly — don’t overmix to keep the meatloaf tender.
2. Pack the Jars
-
Divide the mixture into pint jars, leaving 1 inch of headspace.
-
Optional: pour a little beef broth over the top for extra moisture.
3. Remove Air Bubbles
-
Run a clean utensil along the sides of the jars to remove trapped air.
-
Wipe rims clean, place lids, and screw on rings fingertip-tight.
4. Pressure Canning
-
Place jars in a pressure canner with the correct amount of water.
-
Process pint jars at 10–11 PSI:
-
Pints: 75 minutes
-
Quarts (if using): 90 minutes
-
-
Let pressure return to zero naturally before removing jars.
5. Cool & Store
-
Allow jars to cool 12–24 hours.
-
Check seals; lid should not flex.
-
Store in a cool, dark place for up to 1 year.
