🥗 Beetroot, Avocado & Orange Salad

🌿 Ingredients

For the salad:

  • 2 medium beetroots (roasted or boiled), peeled & sliced
  • 1 ripe avocado, sliced
  • 2 oranges, peeled & segmented
  • 2 cups arugula or mixed greens
  • ¼ red onion, thinly sliced
  • 2 tbsp toasted walnuts or almonds
  • 2 tbsp crumbled feta cheese (optional)

For the dressing:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp fresh orange juice
  • 1 tbsp lemon juice
  • 1 tsp honey (or maple syrup for vegan)
  • 1 tsp Dijon mustard
  • Salt & black pepper to taste

🍳 Instructions

  1. Prepare the beets
    Roast at 200°C (400°F) for 35–40 minutes wrapped in foil, or boil until fork-tender. Let cool, then slice.
  2. Assemble the base
    On a large plate or bowl, spread the arugula or mixed greens.
  3. Layer the goodness
    Add beet slices, avocado, orange segments, and red onion.
  4. Add crunch & creaminess
    Sprinkle nuts and feta cheese on top.
  5. Make the dressing
    Whisk olive oil, orange juice, lemon juice, honey, mustard, salt, and pepper until smooth.
  6. Finish & serve
    Drizzle dressing over the salad just before serving. Toss lightly if desired.
