🍅 Baked Feta with Roasted Tomatoes & Honey

✨ Ingredients:

  • 200g block feta cheese
  • 2 cups cherry tomatoes (halved)
  • 3 tbsp extra virgin olive oil
  • 2 cloves garlic (minced)
  • 1 tsp dried oregano
  • ½ tsp chili flakes (optional)
  • Salt & black pepper (to taste)
  • 1–2 tbsp honey
  • Fresh thyme or basil (for garnish)
  • Optional: olives or toasted pine nuts for extra texture

🔥 Instructions:

  1. Preheat oven to 200°C (400°F).
  2. Prepare the base:
    In a baking dish, add cherry tomatoes, garlic, oregano, chili flakes, salt, and pepper. Drizzle with olive oil and toss well.
  3. Add feta:
    Place the feta block in the center of the dish, surrounded by the tomatoes.
  4. Bake:
    Roast for 20–25 minutes until tomatoes are soft and blistered and feta is warm and slightly golden.
  5. Finish with honey:
    Remove from oven and drizzle honey generously over the feta and tomatoes.
  6. Garnish & serve:
    Top with fresh herbs and a little extra olive oil if desired.
