Taco Spaghetti
A fun, creamy Tex-Mex twist on classic spaghetti — cheesy, hearty, and ready in 30 minutes!
Ingredients

1 pound spaghetti noodles

2 pounds ground beef
-
½ yellow onion, diced
-
1 bell pepper, diced
-
2 tablespoons olive oil
-
1 packet taco seasoning
-
1 can (10 oz) diced tomatoes with green chilis (undrained)

1 cup sour cream
-
1 cup beef broth
-
2 cups shredded Mexican blend cheese
Directions
1️⃣ Cook the Pasta
Prepare spaghetti according to package instructions.
Drain and set aside.
2️⃣ Sauté & Brown
In a large skillet, heat olive oil over medium-high heat.
Add diced onion and bell pepper. Sauté for 3–4 minutes until softened.
Add ground beef and cook until browned.
Drain excess fat.
3️⃣ Make it Saucy
Return beef mixture to skillet.
Add:

Taco seasoning
-
Diced tomatoes with green chilis (with juice)

Beef broth
-
Sour cream
-
Shredded cheese
Stir well and simmer on low heat until creamy and cheese is fully melted (about 5–7 minutes).
4️⃣ Combine
Add cooked spaghetti to the skillet.
Toss until noodles are evenly coated in the taco sauce.
5️⃣ Serve
Serve hot.
